The best tarte flambée

Our tarte flambée is popular far beyond the Bötzowkiez. Many of our regular guests come to the Knorke regularly just for this reason.

Flammkuchen is a specialty from Alsace and the neighbouring regions of Lorraine, Saarland, Palatinate and Baden. The basis is a very thinly rolled out base of bread dough. The traditional topping consists of raw onions, bacon and a cream of sour cream, lightly seasoned with salt and pepper. Bake the topped flatbread in the oven over a high heat for a short time until crispy.

Tarte flambée used to be baked in a wood-fired oven before bread to take advantage of the first strong heat. The name comes from the fact that the flames in the oven were not yet fully extinguished when it was inserted.
